Once Saved, Always Saved?

Given the nature of God in relation to the early Hebrews who wandered in an out of the rewards of the covenant, how does the New Testament doctrine of "Once saved, Always saved" fit? Are these two contentions at odds or is "Once Saved, Always Saved" just so easily explained as part of the "new law"?
