What kinds of accommodations do most catering/food service companies make?

i am doing some preliminary wedding planning and i am stuck on my food service for the reception. i have strict religious dietary restrictions and allergies and i want to make sure ALL the food is safe. i would like to make all the food myself and freeze what i can, but i need someone to handle the food the day of and set it up (buffet style) and heat it up and whatnot. i haven't called any caterers yet, but do you think i could find a catering service that would tend to my food service needs?
